I got option to to hold on to my lands when renouncing allegiance (after passed over for castle I captured on my own), but elected to maintain allegiance so I could get a stronger army behind me.
I did that to start with too, i helped to take quite a bit of land before i was ready to hold off any armies.
Then, i took a city and still fief passed to another lord, but this time never had option of renouncing/disputing claim. What happened?
Of course, I asked to get the city as fief after capturing it, even talked to king afterwards. But they keep saying "you've already been rewarded enough" or something.
Do you have a fief or a castle already given you by your king? Once you own a castle and sometimes a fief aswell, then your king will give taken castles to his other men or himself. However you should always get the option to renounce your claim and keep the castle you have just taken. If you join in the attack on a castle then the lord who lead the attack will get the option to keep it.
It has been a few months since i last played the game but i think you get the option to renounce or ask your king for the castle, im not sure.
The last time i played it i wasnt happy with the position of the castle i took and got given by the king i joined, so before i renounced i took my army out, let him keep it and chose the castle in the position i wanted and took it, i worked forward on a weak faction from there.
I dont know if you do this already but have two or three saved games just incase something goes wrong. If you play the game like me you will make plenty of mistakes and bad choices, lose your army lots of times, possibly have 1 or 2 game errors, restart the game countless times and love it

I was successful in renouncing my allegiance and managed to hold onto all my lands.

Having a little trouble recruiting lords (former allies now enemies) to my cause...even NPC's I have "devouted" relationship (70+). Not sure why. My persuasion is decent (level 6 I think). Any ideas?
Ok, when you renounce your allegiance you lose points with the lords of that realm (if you have managed to make friends with lords from other factions you will notice the relationship points you have with them will be the same).
All you have to do is go and do missions for them all over again
I wouldnt worry too much though, it doesnt matter which factions you recruit lords from. Also after a short while you will notice that lords will renounce their allegiance or get kicked out of a faction and they will go to your main castle and hang about there until you return, just go inside your castle and you will see them, when you talk to them you will get the option to recruit them.
For quite a while i just relied upon the heroes you find in taverns, have them join you, kit them up with all the best weapons etc, level them up till your happy then give them a lordship and an army.

Your Right to Rule will also determine whether or not Lords will want to join you. Family ties can also have a significant impact.
You can send your companions out on missions to increase your Right to Rule rating. Renown is another factor. Try competing in tournaments or have a fight with the Kings in other realms.
